Chocolate Basque Cheesecake

Ingredients

• 250 g double cream
• 142 g 70% dark chocolate
• 4 g ground coffee (approx. 3/4 tbsp)
• 1 tsp vanilla
• 405 g full fat cream cheese
• 115 g caster sugar
• 10 g plain flour
• 5 g cocoa powder
• 1/2 tsp sea salt
• 145 g whole eggs, whisked (approx. 2 1/2-3 large)

Steps

1. Bake at 230°C for 25 minutes.
2. Alternatively, 446°F and check at about 18-20 minutes since it’s half of the ingredients.
